Is it possible to make sponge cakes with egg whites only. I work in a restaurant and we throw away about 20 egg whites every week (some times more). I just want to be able to bake something with it. I have tried Pav's but they are not very popular so I have stoped making them. Just thinking if I can make sponge cakes then layer them it will be more popular.

You can try making angel food cakes. Another way is making Concorde Gateau. . a diabetic's worst nightmare.

I was also going to recommend the angelfood cake.
