I make roux sauce in the microwave and I truly think it is fine.For something special I'd dirty a pot but for evry day never!I also like Simon Holst's butterless butter chicken and my "homemade" Christmas mince is just the bought stuff with plenty of brandy and minced dried apricots and dates added and refrigerated for a couple of months.

Butter Chicken
From “Dish it Up”, by Simon Holst
Butter chicken must be one of the most popular dishes in Indian restaurants – and not
without good reason, the combination of chicken and a creamy, spiced tomato sauce really is
delicious.
For 2–3 servings:
2 Tbsp canola oil
1 medium onion, finely diced
2 cloves garlic, crushed, peeled and chopped
2 tsp curry powder (mild or hot according to taste)
1 tsp each ground cumin, coriander and ginger
250–300g boneless skinless chicken breasts or thighs, cubed
425g can whole or diced tomatoes in juice
1 Tbsp tomato paste
1–2 tsp garam masala
½ cup plain unsweetened yoghurt
¼ cup evaporated milk or cream
½ -1 tsp salt
1–2 Tbsp chopped coriander
Heat the oil in a large pan, then add the finely diced onion and chopped garlic. Cook, stirring
frequently, until the onion is soft and clear but has not browned (about 5 minutes). Add the
curry powder, cumin, coriander and ginger, and cook, stirring constantly, for about a minute
longer.
Add the chicken to the pan and cook, stirring occasionally, until it has lost its pinkness, then
stir in the canned tomatoes (plus juice) and tomato paste. Allow the mixture to boil, then
reduce the heat to a gentle simmer and cook for 8–10 minutes, or until the chicken is cooked
through.
Stir in the remaining ingredients, add salt to taste, and reheat without boiling. Serve over
steamed rice, accompanied with poppadums and/or naan bread (naan is now available
frozen in many supermarkets).
VARIATION: For an extra-smooth sauce, replace the can of tomatoes and tomato paste with
a 300g can of condensed tomato soup plus 1/2 cup water and cook as above.

Had a great pizza for our lunch. Made the base using a bread dough recipe with yeast. Topped with leftover tinned tomatoes mixed with frozen spinach, leftover cook n cook chicken slices, leftover potato bake, leftover green beans and pastrami and topped with cheese and jalapeno chunks. Wish there was a recipe for this but I'll never know the quantities again!

I just made Tandoori Skinless Chicken thighs - 2 Tablespoons Pateks Tandori Paste to 1 tablespoon Natural Youghurt. Then plonked on the Kiwi BBQ and had with a mesclun based salad. nom nom nom. non authentic.

I have also mucked around tonight with

"Pams Yoghurt Cake"

I used slimmers yoghurt when specifically told not too (thats all i had). I put in an extra Tablespoon of juice. cause thats what came out of the lemons. Didn't use a Bundt tin. and I have just coated it with lemon syrup from another recipe.
Its to take for a colleagues birthday morning tea tommorrow,,,, will let you know if I have gotten away with my non authenticity. lol

good on you toadfish.if it works for you "go for it" but best be careful calling it Pams lemon yoghurt cake.you KNOW I am the copy and paste queen and I couldn't POSSIBLY know ANYTHING about cooking and of course, Iknow SQUAT, so lets hope it works out for you LOL

I did see a lovely looking Middle Eastern "Pizza" in the latest AWW magazine ( the one with Annabelle Langbein on the cover) it ha dlamb mice and I must say, it certainly looked tasty.

I use a tin of strained baby apples to cook with my pork and as apple sauce. I just add a little mustard.

Unauthentic!
