I used to make bread with a proportion of barley flour and it had a great flavour.It didn't rise as much as conventional white flour bread.The recipe was in Elizabeth David's English Bread and Yeast Cookery.Let me know if you would like me to type it out for you (I don't have it on my hard disk).

Hi there my reference to previously was prior to my post.sorry grammer not so good that night, I am interested in alternatives to wheat flour and like the sound of barley was interested to know how it baked what it was useful for and what is was not so good for.Also what it can be mixed with other than wheat flour for a good all purpose consistency flour! Thanks for any help in advance I dont get in her for a few days at a time and then I can never find my posts. Kind regards
