Christmas Pudding (old recipe) 2 slightly heaped cups of flour, 1 c brown sugar, 75gr butter(rub into flour and sugar) pinch salt, 1tsp nutmeg, 1 1/2 cups mixed fruit, 1tblsp golden syrup, 1tsp baking soda dissolved in a little boiling water. Mix all ingredients to a stock consistency with milk. Steam in a cloth or pudding basin for 2 hours.

Another oldie ( Steamed Rainbow Pudding) 75gr butter, 75gr sugar, 1 tsp vanilla ess, 2 eggs, 1/4 c milk, 150 gr flour, 1 tsp baking powder, 1dsp cocoa and cochineal to color. Cream butter and sugar, beat eggs add to mix with dry ingredients, add milk. Divide mix in to 3 parts and color. Steam for 2 hours in greased pudding bowl. Mum used to put jam in the bottom of the bowl to provide a sauce. This may have been an old Edmonds recipe.

I was at a hangi in Perth where a poor-man's pudding was prepared w/ plum jam then placed in large fruit tins, sealed w/ tin-foil & steamed in the hangi. Apparently the pudding maker learned the method when she was in Taumaranui. Anyone got the recipe please?
