Lemon steamed pudding
Ingredients (serves 6)

* 150g butter, softened
* 3/4 cup caster sugar
* 2 large lemons, rind finely grated, juiced
* 2 eggs, at room temperature
* 1 1/2 cups self-raising flour
* pouring cream and lemon zest, to serve

Method

1. Grease a 6-cup capacity pudding basin. Line base with baking paper.
2. Using an electric mixer, beat butter, sugar and lemon rind until light and creamy. Add eggs, 1 at a time, beating well after each addition. Sift flour over mixture. Add 1/3 cup juice. Fold until just combined.

Lemon steamed pudding...continued # Spoon batter into basin. Smooth surface. Cover basin with baking paper and foil. Secure with string (see note). Place a trivet or inverted saucer in a large saucepan. Sit basin on trivet. Pour boiling water into saucepan so it comes halfway up side of basin. Cover saucepan. Cook pudding over medium heat for 1 1/2 hours, adding more boiling water as required.
# Lift basin out of saucepan. Remove foil and paper. Turn pudding onto a warm plate. Top with lemon zest. Cut into wedges and serve with cream.

Steamed jam pudding * 1/3 cup raspberry jam
* ? cup fresh or thawed frozen raspberries
* 125g unsalted butter, softened, plus extra, for greasing
* ? cup caster sugar
* Zest of 2 lemons, finely chopped
* 2 eggs
* 2 cups plain flour
* 2 teaspoons baking powder
* 1 cup (250mL) warm milk
* Ice cream or thick cream, to serve


Grease a 1L (4-cup) capacity porcelain pudding basin with butter. Put it in the fridge for 5 minutes, then grease again. Place jam and raspberries in the base of the basin. Using an electric mixer to beat butter, sugar and lemon rind until light and fluffy. Add eggs and beat on medium speed until smooth. Sift flour and baking powder into mixture, pour in milk and beat on low speed until just combined.

Steamed jam pudding...continued Spoon batter into basin, smooth top and place a circle of baking paper over the surface of the pudding. Place two circles of aluminium foil over the basin and tie on with unwaxed kitchen string.

Place basin in a large saucepan or pot and pour in enough boiling water to reach halfway up the side of the basin. Cover and simmer for 1 ? to 2 hours or until a skewer inserted into the pudding comes out clean. Check the water level every 30 minutes and top up if necessary. Remove pudding from saucepan, remove foil and paper, stand for 5 minutes before inverting on to a plate. Serve immediately with custard or thick cream.

Steamed Date Pudding Ingredients:
1 ¾ cups flour
2 tsp baking powder
1 tsp salt
½ tsp cinnamon
1 cup finely chopped dates
1 cup chopped walnuts
2/3 cup butter or margarine
1cup firmly packed dark brown sugar
2 eggs
2/3 cup evaporated milk
1/3 cup water

Method:
Mix 1 ½ cups flour with baking powder, salt, and cinnamon. Mix remaining ¼ cup flour with dates and walnuts to coat well. Cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine milk and water; add alternately with dry ingredients to creamed mixture, beginning and ending with dry ingredients. Add date-nut mixture; mix until well blended.
Turn into a greased and floured steam pudding pan or 2 pound coffee can and cover with 4-6 layers of paper towelling. Set can/ pan in slow cooker. Pour 1 ½ cups boiling water around can/pan.
Cover and cook on High 2 – 4 hours. Unmould and serve with Cream/ icecream / custard.

There are so many here, but if anyone wants the Edmonds overnight steam pudding let me know. I have used this for Xmas for 38 years! ! My kids don't like the peel etc, this has only raisins, sultanas and currant. My MIL always made it and I have ever since. Very easy to make too!

steamed pudding recipe to feed the whanau 6 cups self raising flour
6 cups milk
3/4 cup castor sugar
250grms butter
1/4 tin golden syrup
6tsp baking soda

STEP 1:
in a saucepan add the butter, sugar & golden syrup. Heat till the butter melts & the sugar disolves.

STEP2:
add the milk but save some to dissolve the baking soda.

STEP 3:
add flour, mix well to remove all the lumps, add the milk & baking soda.

STEP 4:
pour mixture into an A10 tin lined with a bread bag, & tie the top. put the tin into the pot of boiling water, making sure the water doesnt cover the tin. put lid on, steam for bout 1 1/2 ~ 2 hours.

STEP 5:
when cooke take bread bag out of tin, untie the bread bag, turn upside down & slide the bag off the pudding, let sit for 3 minits & slice to required size, best served with custard ice cream fruit salad

1 cup currants1 cup cold water
1 cup sultanas1 tsp butter dissolved in
50g lemon peel1cup hot water

Mix the 2 cups of liquid together, and pour over prepared fruit and dry ingredients. Stir well and stand overnight. Next day mix well again. Steam in a pudding basin for 3 hours. (I leave out the peel and add 50g raisins. )
