With that cold snap I decided to make a steamed pud. I needed a 6 cup size. Alison Holst has the easiest one I've seen. Just mix and steam. So I made it and it went down a treat. So pleased!

In the book "Alison Holsts Good Food", it is called "Marion's Midwinter Pudding" p. 165. In the little book (Alison & Simon Holst)" 20 minute desserts"it is called "Fruity Steamed Pudding". This one has only microwave instructions. I had no suitable microwane ring mould so I steamed it for nearly 3 hours. Has no flour butter or oil.uses Quick oats.

lindylambchops1. it has lemon essence (i used lemon juice) and a variety of spices. But you could adapt to use any flavourings, it is such a basic recipe. And custard, cream and ice cream options (all three) for my lot.

A curious thing about this recipe - it develops a darker colour as it cools.
