Biscoff Rocky Road

200g biscoff cookies, chopped
50g macadamias, toasted
100g white marshmallows, halved
515g milk chocolate
1/2 cup biscoff spread

-Topping
50g biscoff cookies
50g caramilk choc chips

In a large bowl, add chopped biscoff cookies, macadamia, marshmallows and stir well. Melt milk chocolate in microwave on high (30 second increments) until melted. Fold in melted chocolate until marshmallow mixture is well coated. Pour half the mixture into a pan (approx 20 x 30cm) lined with baking paper. Evenly dollop teaspoons of biscoff spread, using 1/4 cup. Pour remaining mixture on top, and press with the back of a spoon to level. Top with the whole biscoff cookies, remaining biscoff spread and caramilk choc chips. Place in the fridge for a few hours until firm (l like to put mine in the freezer for a bit to speed up the process!)
