Lazy Lasagne by Alison Holst (Microwave Version)

- 500g mince
- 2 cloves garlic, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 can (425g) tomato puree
- 2 tablespoons tomato concentrate
- 1 packet tomato soup mix
- 2 teaspoons beef stock granules
- 1 1/2 cups hot water
- Lasagne sheets (dried or fresh)
- 1 cup grated cheese, divided
- 2 teaspoons cornflour
- 1 egg
- 3/4 cup milk
- Paprika


1. Prepare the Meat Sauce: In a large bowl, mix the mince, garlic, basil, oregano, tomato puree, tomato concentrate, tomato soup mix, beef stock granules, and hot water until well combined.

2. Assemble the Lasagne:
- Spray or butter a lasagne dish.
- Pour 1/3 of the meat mixture into the dish.
- Cover with a layer of lasagne sheets.
- Sprinkle with 1/2 cup of grated cheese.
- Repeat the layers, ending with the remaining meat mixture on top.

3. Cook the Lasagne: Cover the dish and microwave on high for 20 minutes (adjust based on your microwave's power).

4. Prepare the Cheese Topping:
- In a separate bowl, mix the remaining cheese, cornflour, egg, and milk until smooth.
- Pour this mixture evenly over the cooked lasagne.
- Sprinkle with paprika.

5. Finish Cooking:
- Cover the dish again and microwave at 50% power for 10 minutes.
- Let the lasagne stand for 15-30 minutes before serving to set.

- Starting with a lasagne sheet on the bottom makes serving easier.
- Adjust cooking times according to your microwave's power.
