Gluten Free Breadmaker Bread Make up the bread MIX first: 4 cups white rice flour, 1½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but the mixture makes a very small loaf so I 1½ times the recipe that follows and cook for the same time). One loaf: 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar. Sift dry ingredients, add yeast Blend milk oil eggs or egg replacer and vinegar. Add to dry ingredients, mix to combine. Press into bread pan. Close lid, bake following breadmaker instructions for a white loaf(about 3 hours) Cut when cold and freeze in slices unless going to eat. Do not double recipe as it overflows pan only use one and a half times the mix for a 1kg loaf. :)

hi! I used to be a regular in this thread a couple of years ago- but it got too political! I am intolerant to numerous additives/preservatives so make all my own stuff and thought some people may not know of this book - which is great! It's called Friendly Food. It has recipes by allergies, ie nut free, dairy free, gluten free etc. Worth looking at in library if you want some new ideas. I bought if from Whitcoulls a few years ago, has recipes from breakfast through to baking and desserts

hi monofoil Im also allergic/intolerant to numerous foods etc.I find most recipes have ingredients in that I cant have, such as guar gum, soy lecithin (some which isnt GF), or unspecified ingredients such as "natural flavour" or other additives or preservatives.One good thing has been our vege garden.We dont use any sprays and only use a fish fertiliser which works really well.I now have cooked brown rice with fruit and sliced almonds/walnuts for breakfast and this has been a big help and keeps me full right through till lunch time, which means I dont have to worry about eating at morning tea time, thus avoiding any baking, which of course is a lot healthier. Have you tried Melros Worcestershire Sauce or Braggs All Purpose Seasoning - two great totally gluten free products :)

I know what I can and can't eat I cannot tolerate any preservatives and additives and colourings. Rather than GF

NeitherBraggs nor the Melrose sauces have any preservatives or additives, thats why I suggested them. Braggs All Purpose Seasoning is s soy sauce, its ingredients are: non-GMO certified soybeans and purified water only.The Melrose sauce's ingredients are: Organic Apple Cider Vinegar, Organic Molasses, Organic Apple Juice concentrate, Tamarind, salt, Jamaican Pepper, herbs and spices :)

Braggs All Purpose Seasoning is just great in stir fries, and can be used in salads and dressings, casseroles, soups, gravies and sauces and macrobiotics, I love it! Use the Melrose Worcestershire Sauce just as you would ordinary Worcester sauce, it tastes just like the real thing :)

I haven't read this whole thread coz it is so long! I am a newly diagnosed coeliac....am waiting on my subsidy number to come through. Am also a vegetarian. Above it says to watch out for wines etc? The dietician informed me the only alcohol that contains gluten is beer....I haven't had any reactions from wine, and don't drink beer...though on the weekend I had a reaction from the boys cleaning the BBQ with beer (they forgot about me!). It seems I am alot more sensitive than my 2 sisters, also diagnosed.

Hi kizzier wine is fine and you can buy a gluten free beer although it is a little pricey.When you get your subsidy number you may be a little disappointed,I get flour on prescription but the amount I pay is equal to supermarket price .

hi frances1266 -here ya go 1 1/2 cup GF flour
1/2 teaspoon salt
3 teaspoon baking powder
4 tablespoons fat (olivani)
4 tablespoons water
Sift all the dry ingredients together. This is important to give some lift to the flour. Cut fat in using two forks or a pastry blender until the mixture resembles clumps about the size of small peas. Add cold water, a little at a time, distributing the water evenly throughout the whole of the mixture. When the mixture sticks together, but is not doughy, roll out onto a table or pie mat dusted with flour. Brush top with a beaten egg. Bake at 400 F for 15 minutes.

by the way frances1266 - the pastry is not crumbly and it freezes well. I use it for both savoury and sweet pies

I wouldn't have had the gastroscopy if I had known the subsidy was not substantial!

Hi My 15yr Daughter is cealiac[Gluten Free}, & We are going to make a lollie Cake using rice cookies Arnotts, They cost $3.60, which is not to bad. it's hard for her when she goes to b-day parties etc. Believe it or not her mates love the Gluten Free Choc Cake. Thanks for some Tips on here. Didn't Know about Maggie Chicken Stock. I still think they shouldn't make Gluten Free products so expensive. All the Best xx From Dunedin

frances1266 - how did they turn out! I bake mine in the texan muffins tins but I double the pastry recipe
