Chicken with rice
Ingredients
1 tablespoon oil,
2 boneless and skinless chicken breasts, thinly sliced ,
1 onion, chopped ,
3 cloves garlic, crushed ,
400g can chopped tomatoes ,
1/4 cup crunchy peanut butter ,
1 tablespoon curry powder ,
3 cups chicken stock ,
1 1/2 cups basmati rice ,
1 large pinch thyme ,
1/2 teaspoon salt ,
Heat the oil in a large saucepan. Shake maize cornflour over chicken slices) and cook the until brown then set aside. Add the onion and garlic to the pan and cook till soft. Return the chicken to the pan and mix in the tomatoes, peanut butter, curry powder and thyme and mix well to disperse the peanut butter through the mixture.
Add the chicken stock and bring to the boil. Cover and simmer 20 minutes. Serve on rice.

Lemon Chicken
4 single chicken breast fillets
2 egg whites, lightly beaten
1/2 cup plain gluten free flour
30 g butter
2 tablespoons vegetable oil
1 1/2 tablespoons maize cornflour
1 1/4 tablespoons brown sugar
1/2 cup lemon juice
1/2 teaspoon grated ginger
1 teaspoon tamari soy sauce
1 cup gluten-free chicken stock

Bang the chicken between sheets of cling-wrap until 1cm thick.
Dip chicken in the beaten egg white and then coat in plain gf flour Shake off any excess flour.
Heat the butter and oil in a large frypan. Cook chicken until lightly browned on both sides and cooked through. Drain on absorbent kitchen paper.
Blend the cornflour, brown sugar and the lemon juice in a small saucepan. Add the grated ginger, soy sauce and the stock. Bring the sauce to the boil and stir constantly until the sauce thickens.
Slice the chicken,serve drizzled with the sauce and some extra lemon wedges or slices.

Yes I make it often.I use organic rolled oats with it though so if you are ok with oats will not be a problem.Am sure it will be fine without the oats, will just be more like a crisp rather than a crumble.

its so hard i wish my daughter was just gluten intolerant , shes also milk and soya intolerant,its hard finding recipies ,especially cake &biscuite recipies .

recipes There are thousands of dairyfree gluten free recipes on the yahoo site vegan-and-gluten-free,There are a lot of baking recipes and many are soy free as well.

thank you both we are totally new to this ,as in the last week ,already theres a difference , no more running to the loo ,no stomach cramps etc ,just took 2 years of nagging at my dr to get this far ,

yup sulphites is the correct spelling :)

Hope you like them - I had some wwoofers that wouldn't eat most of my food (LOL) but they loved those fritters, so every second day that is what they got! In between they needed carbs with carbs :)

Being Coeliac I am always looking for things for morning tea.I make the following which is not bad but very crumbly(probably because of the GF flour) can anyone suggest what to add to make it more solid.I tried reducing the sugar because it seems excessive but this made it more crumbly

1/2 tsp baking soda
3/4 cup gluten free flour
1/2 cup brown sugar
1/2 cup coconut
1/2 cup crushed cornflakes(GF)
1/2 cup rice bubbles(GF)
1/4 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup chopped nuts
1/4 cup pumpkin seeds
1/4 cup sultanas
Melt the butter, sugar and syrup together.
Put all the other ingredients into a bowl.Mix well
Make a well in the middle of the dry ingredients.Add butter mixture.Mix well.
Press mixture into a swiss roll tin.
Bake at 160 degrees C for 15-20 minutes, or when golden brown.
Slice when still warm.

You sound similar to me.Any tinsy amount of gluten and Im in trouble.I will bump up the thread Gluten Intolerant but not Coeliac - you may be interested in that.

Pommyjohn, try adding some apple sauce, add in at the same time as the butter etc, or maybe you could just grate apple through the mix,

hey everyone, i made danas chocolate cake, and made it gluten free, using healtheris baking mix, the cake normally rises very high, gluten free it does not but instead it comes out fudgey like, honestly to die for yummy!

Dana's chocolate cake
Heat oven to 180 degrees C.

Beat together - 100 g melted butter, 2 eggs, 1 1/2 cups sugar, 1 teaspoon vanilla, 1 teaspoon salt and 1 1/2 cups milk.

Sift together 1 1/3 cups flour, 1 1/2 teaspoons baking soda - NOT BAKING POWDER. and 2/3 cups cocoa.

Mix these dry ingredients into wet mixture. It is possible to do all this using a hand beater or just a spoon as the batter is quite thin. The cake will rise a lot.

Bake 40 - 50 minutes.

To make gluten free using gluten free flour and cocoa – it will take 35-40mins to cook and wont rise the same as the non gluten free version.

I iced it using a butter icing

Jum,motorbo,would love your recipes,sounds nice,also I read someone post in here about being on gluten for a couple of weeks,not sure whom it was,but I had to be gluten for 6 weeks before tests were done,had not a very nice time,rash on skin,gritty eyes,bad tummy pain,toilet issues,bed rotten gas lol runny ichy nose and stuffy nose,no sleep,all due to coelaic not nice others,everyone is different,I so feel for you all.
