With 1kg carrots, chunk of pumpkin, two brocolli, one cauliflower and some tomatoes.What can I make?
Considering a cashew nut and carrot loaf, but lack the 1.5 tsp carraway seeds the recipe calls for - is this a necessary?
Also wondering about a pumpkin soup... I do have some cream and some soft cheese needing to be used up.

You have all those ingredients for the healthy soup......just add drumstick and you are done.

You could leave the carraway seeds out, but it will taste slightly different.
easy pumpkin soup: chop 1 onion finely and chop pumpkin into pieces, cook together in a little salted water until soft enough to mash. Drain most of the water off and mash. Add enough milk and some cream (if you have) to give a nice soup consistency (not too thin). Add a dash of nutmeg and salt and pepper to taste. Reheat but do not boil.

the broccoli and cauli could be made into a casserole. 1 onion chopped, cauli and or broccoli 1 tin 450g creamed corn salt and pepper to taste 1 cup grated cheese white sauce cook cauli/broccoli in a little salt boiling water until cooked to how you like them. saute onion, make a white sauce using some of the liquid from the cauli to the white sauce add the corn, most of the cheese and cauli/broccoli mix and season to taste. Pour into a casserole dish and top with a crumble mix using rolled oats, butter or marge, breadcrumbs and the rest of the cheese. bake at 180C until the topping is nice and golden and cheese melted.

Broccoli Soup 500g broccoli25 g butter1 tsp sugar60g cheese5 cups chicken stock3/4 cup cream1 onion, choppedsalt and pepper Sauté onions in butter.Add coarsely chopped broccoli, stalks included.Cover with stock and bring to boil, simmer till tender. Put thru blender or use hand wand.Return to pot and add sugar, seasonings, cheese and milk.Heat but do not boil.

Cream of Cauliflower Soup Ingredients: 1 cupwater1 cup cauliflower pieces1 potato, cut into pieces2 tbsp butter1 onion, chopped1 garlic clove, finely chopped 2 cups chicken broth1 tsp celery saltSalt and pepper 1/2 cup cream Method: Bring water to a boil. Add cauliflower and potato pieces. Lower heat and simmer 10 minutes. Set aside, in cooking liquids. Melt butter into a clean casserole. Brown onion and garlic for 1 minute. Add cauliflower and potato pieces, along with cooking liquids. Pour in chicken broth. Puree until thoroughly mixed and smooth. Sprinkle with celery salt, salt and pepper.Bring to a boil. Stir in cream.

Creamy Pumpkin Soup~Electric hand wand is ideal Ingredients: 1 tbsp butter1 large onion, chopped2 cups chicken stock1 kg steamed pumpkin, peeled2 tsp grated fresh root ginger 1 tsp ground nutmeg2 tbsp cornflour2 cups milksalt and freshly ground black pepper2 tbsp chopped parsley Method: Heat butter in a large saucepan. Add onion and cook for 5 minutes. Puree the steamed pumpkin, ginger and nutmeg with the chicken stock. Now add to the onions. Cover and let simmer for 15 - 20 minutes or until the ingredients are tender. If required, puree the mixture again. Mix the cornflour into a small amount of the milk, then stir in the remaining milk.Add to the soup mixture. Reheat, stirring constantly, until the soup thickens, then season with the salt and black pepper. Sprinkle of chopped parsley on top. Variations: Grate some potatoes or kumara into the mix while simmering Replace milk with 1 cup of milk and 1/2 cup of cream. Add 1 tsp of curry powder or some very finely chopped rosemary.

Mixed Pickle (Aunt Daisy) 5 pound mixed vegetables 3 pints vinegar 3/4c flour 3 sm cups sugar 1TBSP each mustard, curry powder & Turmeric 1/2tsp cayenne (opt) Cook vegetables in salt & water - 1/2lb salt to 4 pints water Strain. Boil vinegar with spices & sugar & thicken. Put strained vegetables in & bottle.
