When I go to a restaurent I love the first course of chilled lovely tomatoes on gorgeous toasted bread.I try to get the taste but I can't.I have the chilled tomatoes, salt and pepper but something is missing, would appreciate anyone who can help as I have heaps of fresh tomatoes at the moment.

Bruschetta. Good tomatoes, deseeded, with a big glug of very good quality extra virgin olive oil, lots of fresh black pepper and salt and Fresh basil. On toasted ( preferably on the BBQ) ciabatta or sour dough bread. The tomatoes need to be vine ripened and well ripe.

And a drizzle of Balsamic syrup over the top.Not too much,just a wee touch.
Can also swipe a cut garlic clove across the top of the bread before putting topping on.
To make the syrup, boil up Balsamic vinegar with a little or a lot of brown sugar (depending on taste) until it forms a syrup.Much cheaper than buying it.
Best Bruschetta in town is at Divine - The Steak House....utterly gorgeous and never enough LOL
