im cooking a small mutton roast for dinner...ive rubbed it with oil and smoked garlic and put some slithers of smoked garlic under the skin.....any other suggestions would be welcomed...tia

A little water in the baking dish keeps it moist and is gone by serving time.
I like to stab the outside and put garlic and rosemary etc., and sometimes a clove into the wounds!

Yes have never cooked mutton - cannot stand the smell it makes, tastes like wool too.

It all depends on how well they are fed and looked after, that is what gives meat it's flavour.Mutton fed properly is beautiful.
