Nothing wrong with a well cooked turkey. Gordon Ramsays tip a couple of weeks ago was spot on and he learnt this from French chefs. You rest the turkey for as long as you cooked it which gives you a deliciously moist meat. He also makes a herb butter for just under the skin and layers the top of the bird with bacon or pancetta.

Turkey Rillettes

100g butter
1/3 cup cream
1/4 teaspoon hot paprika
2 cups (320g) cooked turkey meat, coarsely chopped
1/2 small red onion, chopped
1/4 cup flat-leaf parsley leaves
pickled onions, to serve
olives, to serve
French bread stick, to serve

Melt butter with cream and hot paprika in small saucepan, stirring over low heat, until combined.

Blend or process turkey meat, red onion and parsley, pulsing, while adding butter mixture in thin, steady stream.

Place rillette mixture in four 1/2-cup (125ml) dishes, cover; refrigerate until required. Serve with pickled onions, olives and thinly sliced toasted french bread stick.

turkey pie or burger patties/rissoles, i dislike turkey, big, dry, tasteless, expensive, pappy, overrated meat

Turkey & New Potato Curry

500g turkey breast strips
1 teaspoon peanut oil
1 medium onion, chopped finely
2 cloves garlic, crushed
2 red chillies, seeded, chopped
1 tablespoon grated fresh ginger
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
500g baby new potatoes, halved
750ml chicken stock
1 tablespoon cornflour
60ml light coconut milk
150g baby spinach leaves
1/4 cup chopped fresh coriander leaves

Heat a large non-stick pan; cook the turkey, in batches, until browned lightly. Remove from the pan. Heat the oil in the same pan; cook the onion, garlic, chilli and ginger until soft. Stir in the spices and cook, stirring, until fragrant.

Add the potatoes and stock, bring to the boil; simmer, covered, for about 20 minutes or until tender.

Stir in the blended cornflour and milk, spinach and turkey. Stir over the heat until the sauce boils and thickens slightly and the turkey is cooked through. Stir in the coriander

Personally I'd feed it to the neighbour's cat, who is rather unfussy about real meat. No just kidding, but you gotta admit, turkey is not the nicest food, especially as most NZers don't bother brining, and I often wonder why it is used as a celebratory meal when it is so blah and families are so small.

lol we didn't have tooo much leftover because I got a smaller one, so we had turkey burgers boxing day night and it was about done, and they were nice too, cranberry sauce instead of tomato sauce, turkey, stuffing, lettuce, tomato and mayo.

I did stuffed turkey breasts this year again and they are delicious cold. No need to 'doctor' them. Would never go back to cooking the whole bird again unless I had a huge crowd who would finish it all off in one go.

I am sure someone has written a book that has a title like 101 ways to serve left over turkey.It's really overated for taste. But I believe it has some good nutrients in it.
