Hi doing this for work morning tea and wondered if i could cut up the bread slices and put into a plastic snap lock bag to take to work, so I only needed to put on the cream cheese and salmon when there? would the bread go stale?

I do it that way and it is fine - the other option is to bake the slices of french bread and let them cool then pack. That way you have a crispy base and definitely not stale

And a tip for getting that salmon odour from your fingers when you've finished preparation:Rub your hands around the inside of a wet stainless steel sink.

I would make some crostini by slicing the bread, spray or brush with olive oil, sprinkle with finely chopped herb of choice and bake 10 mins or so in a moderate oven.Great with salmon.
