How do you wilt spinach please...

Have a feta and spinach pie recipe which you have to wilt the spinach for. How do you do this ? Also which is best fresh or frozen spinach ? Thanks in advance

I'm assuming the recipe is referring to fresh and I wonder if it means just to blanch it very quickly perhaps (then let it drain and pat it dry... . with frozen spinach there would be no need to blanch it, but... . you'll need to defrost it and squeeze out all the water in it, otherwise it'll make your pie soggy

to wilt fresh just put it in a frypan and mix it over till wilted, dont put it in boiling water as this will make it soggy. and if using frozen then make sure you squeeze it well to remove excess liquid.
