Caramel cream pie, chocolate eclairs and a chocolate pudding, all were experimental and all seemed to be appreciated and all were low carb. :)

Here's an easy one that makes three - Ginger Loaf (Eat one, freeze one, give one away!) I also have a nice one that makes one if you would like me to post it.
Mix in a large bowl –
2 cups boiling water 250 g cubed butter
add 2 cups sugar ¾ cup golden syrup 2 tsp baking soda ……..stir (using a large whisk is helpful)
Divide into 3 loaf tins (eat one, freeze one, give one away!) ¼ hour @ 180 C then ½ hour @ 160C Keep testing until skewer comes out clean. Texture better the next day.

We're shearing next week, so I had a good bake up today. I made double batches of everything and most of it is in the freezer: Chocolate Banana Cake, Apricot Cake, Raisin buns and bread.

I'm baking some salmon tomorrow for lunch. I'm going to call it Fred because I didn't know his/her original name. I do regret sometimes that we ate Porkcelia (try and guess what type of animal she was!) but I was a kid at the time, she was a yummy friend. The home kill guy did it. We also had chickens but I gave up naming them in the end. Must've been another homekill guy because dad denied he'd done it. I watched it though and dad is the person in my mind with the hatchet.
I always found goat too, hmmmm, bitter I think (it's been a while) but edible if you're camping and that's all there is!
I normally approach my meat from downwind so it doesn't get away, fillets sound like they can run fast! :)
