Weetbix Marshmellow Slice 3 weetbix, 3/4c sugar,1c coconut, 1 1/2c sr flour, 125gm butter, 1c water, 1c sugar, 1T gelatine, 1 tsp vanilla, 100gm dark choc, 40gm butter. Crush weetbix, add sugar coconut and melted butter. Press into a slice tin and bake @ 180°C for 25mins. Allow to cool. Meanwhile combine water, sugar & gelatine in a saucepan and simmer 10 mins. Allow to cool. Add vanilla and beat until stiff. Pour onto base. Melt choc and butter allow to cool but no set. Pour over filling and spread. Allow to set and cut into slice.

Low Fat Muesli Bars... 185gm rolled oats, 6 Weetbix crushed, 90gm raisins, 60gm chopped dried apricots, 1/2c honey, 1c orange juice, 2 egg whites. Combine oats, weetbix, raisins and apricots. In sml saucepan blend honey & orange juice over med heat. Bring to boil, then reduce heat and simmer 10mins or until mix is thick & syrupy. Stir honey mix into oat mix then stir in egg whites. Press into slice tin lined with baking paper & bake @ 180°C for 20-25mins or until golden.

Weetbix Loaves (makes two)...... 8 weetbix crushed,100g butter chopped,2 tsp baking soda,2 cups dried fruit,1 dsp golden syrup, 2 cups sugar - Pour over 2 cups of boiling water, leave 5 mins, stir well add 2 beaten eggs, 2 cups SR flour, salt, 1 tsp each of cinnamon + mixced spice. Bake in 2 lined loaf tins @ 180 C 1 hour. Keep one and give one away or freeze! These keep well.

Chocolate peppermint crunch 1 tbspn cocoa 1 teasp baking powder, 1 cup flour, 84 grms sugar, 3 crushed weetbix, 112 grms melted butter. Mix dry ingredients and add melted butter.Press into sponge roll tin.Bake at 375o C for 15 minutes.Cover while still hot with peppermint icing.When cold, ice with chocolate icing.

Orange weetbix square 150 grms butter, ¾ cup sugar, 4 crushed weetbix, ½ cup coconut, 1½ cups self-raising flour, 2 tbspns orange juice.
Mix dry ingredients well.Melt butter and add orange juice.Add to dry ingredients.Press into greased 28 * 19 cm tin.Bake 180o C for 25 – 30 minutes.Ice with orange or lemon icing while still warm.Cut into squares.

Golden Syrup Weetbix Tart Mum used to make this, no written recipe that I recall.Line pie/flan dish with sweet short pastry, spoon in several Tbsp Golden Syrup, sprinkle crushed weetbix over to cover syrup (not too sparsely).If liked, twist strips of leftover pastry and lay across top in grid pattern.Bake until pastry is cooked, and golden syrup has soaked into weetbix.Sorry, no specific quantities, I just guess.Serve hot with whipped cream or ice cream.Nice cold, too, more chewy.

Berry Nice Muffins 1 cup white self-raising flour
1/4 cup wholemeal self-raising flour
1/2 tsp cinnamon
1/2 cup castor sugar
6 Sanitarium Weet-Bix®, finely crushed
2/3 cup frozen raspberries
2/3 cup frozen blueberries
1 egg, lightly beaten
1 cup Sanitarium® So Good® soymilk
3 Tbsps margarine, melted

1. Sift flours and cinnamon into a large bowl.
2. Stir through sugar, crushed Weet-Bix and berries.
3. Combine egg, So Good and margarine.
4. Add liquid ingredients to dry ingredients, stirring gently until just combined.
5. Spoon mixture into lightly greased muffin tins.
6. Bake in a moderately hot oven, 190C, for 30 minutes.

choc fruit squares ½ cup wholemeal self raising flour
½ cup white self raising flour
4 Sanitarium Weet-Bix, crushed
1 cup Sanitarium Sultanas
½ cup coconut
½ cup sugar
1 Tbsp cocoa
150g margarine
2 tsp golden syrup

1. Sift flour into a bowl and add remaining dry ingredients.
2. Combine margarine and syrup and melt over medium heat or in the microwave.
3. Add liquid ingredients to dry ingredients and mix well.
4. Press into a lightly greased lamington tin. Bake in a moderate oven, 180oC, for 25-30 minutes. Cuts into 20 slices. Dust with icing sugar.

N.B. Can be iced with chocolate or lemon icing.

double choc balls 8 Sanitarium Weet-Bix, crushed
1 cup sultanas
½ cup coconut
2 tablespoons cocoa
395g can sweetened condensed milk
½ cup chocolate sprinkles

1. Place all ingredients, except chocolate sprinkles in a large bowl.Mix well.
2. Form mixture into 30 balls and toss in chocolate sprinkles.

Uncooked weetbix square 18 Weetbix crushed - 1 cup sultana's - 250grams of butter - 1 tablespoon of cocoa - 1 cup of coconut - 1 tin of Condensed milkCrush weetbix and mix in all dry ingreds.Melt butter and Cond. Milk mix with dry ingreds.Tip into a sandwiche tin and leave in fridge until set.Ice with choc icing and sprinkle coconut on the top.Cut into squares and enjoy.Very yummy
