Can anyone supply me with a sweet,sticky marinade

suitable for chicken and pork spareribs maybe? Just simple ingredients would be great. Maybe using jams etc. Thankyou.

I mix 1 Tblsp of Hoisin Sauce and 1 Tblsp of runny honey and just 1 desertpoon of water together then put over my pork chop or chicken after it is three quarters cooked and this gives it a lovely flavour. Not really a marinade though as it could burn.

Sticky Chicken

Marinade
1½ tbsp dark soya sauce
3 tbsp apricot jam
2 tbsp sweet chilli sauce
1 tbsp honey
1 tbsp tomato sauce
1 large pinch Chinese five spice powder

Place marinade in bowl and marinade chicken for 30 mins in fridge,cover with glad wrap.

Use drums, wings or nibbles

Bake in hot oven till juices run clear

Sticky Chicken Wings

Ingredients

1 orange, grated rind and juice only
1 tbsp dark muscovado sugar
1 tbsp clear honey
1 tsp cayenne
1 tsp ground ginger
¼ tsp salt
12 large chicken wings
Method

1. Place the orange rind and juice in a large bowl and stir in the sugar, honey, cayenne, ginger and salt.
2. Add the wings, cover and chill for an hour or two, turning from time to time.
3. Set on a rack and roast at 200C/400F/Gas 6 for 25 minutes or barbecue until cooked through and nicely browned.

Sticky Cocktail Sausages

1kg cocktail sausages (or small chipolata sausages0
3 tablespoons honey or maple syrup
6 tablespoon of Hoisin Sauce
1 teaspoon mustard seeds or sesame seeds

Serves 10-12
Prehet oven to 180 deg C

Place sausages in a large bowl or zip lock bag.Add the honey, hoisin sauce and seeds and squish around to evenly coat the sausages.

Place the sausages in a roasting tin and roast for about 40 mins, stirring a couple of times till golden brown and cooked through.Serve warm with toothpicks, cocktail forks or bamboo skewers as the sausages are quite sticky to handle.These are just delicious and you can never seem to cook enough.
A handy tip – if you can’t find any baby cocktail sausages, use chipolatas and just twist each one into 2-3 small sausages.Cook before cutting then into individual sausages.

How to cook perfect sausages.

Do not prick then before cooking as their flavour and juices will escape, making the sausages dry. The skins are also more likely to split if they have been pricked.
Fry in a dash of oil in a non stick fry pan over a medium heat for 20 minutes, turning now and again until golden brown.

Alternatively bake, brushed with oil, in a roasting tin with the oven at 180 deg C and set to fan bake.Cook 25 minutes, tossing occasionally.

This is our family favourite for chicken wings...

1/2 c soy sauce
1/3 c lemon juice
3 T honey
2 cloves garlic, crushed
1/4 c sweet chilli sauce
1/2 c lightly packed fresh mint, roughly chopped (optional)

Marinate for at least 20 mins then bake at 200c for 50 min or until cooked through and caramelised. Turn once or twice.
