Our favourite marinade is as follows - the perfect peanut sauce is still a work-i-progress :)
• 500 grams chicken breast meat, cut into slices • ⅓ cup coconut milk • 3 tablespoons sugar • 1 tablespoon yellow curry powder • ⅓ cup fish sauce • 1 tablespoon peanut oil Method 1. Mix all the ingredients together and marinate for at least 15 minutes or overnight. 2. Remove chicken pieces and grill until cooked. 3. Serve with peanut sauce and garnish with some fresh vegetables. I dont know about the marinade bit, but here is my Satay Sauce recipe.In a pot saute 1 onion and 1 clove garlic.Add 1 tin coconut cream, 3T peanut butter and rind and juice of one lemon.Add fresh or dried chillies or chilli flakes to taste.Simmer gently till tastes yummy :-)
