Satay Sauce

Hi, Does anyone have a great recipe for easy to make Satay sauce (with a bit of chilli) that can be poured. Last night I made some -tasted great - but was just too thick and I really couldn't think of what to thin it with. So any ideas would be great. TIA.

Indonesian Satay (no peanuts)

Serves 6

750g chicken meat in strips or cubes
Marinade
½ tsp chilli shrimp paste
2 med onions
3 tsp grated ginger
2 tab lime/lemon juice
1 ½ tsp salt
2 tab light soy sauce
2 tab dark soy sauce
2 tab sesame oil
2 tab dark palm sugar

veg oil for brushing

Sauce
½ c coconut cream

Mix chicken with marinade, refrigerate 1 – 24 hours.

Thread meat on to soaked satay sticks, keeping excess marinade.

Mix leftover marinade with coconut cream, simmer until thickened.

Grill 5 – 8 min, brushing once with oil. Serve with sauce on the side,& salads.

Thai Satay

500g chicken, beef or pork, sliced thinly

Marinade:

2 cloves garlic, crushed
3 tab coconut cream
1 tsp ground coriander
1 tsp ground cumin
½ tsp salt
1 tsp tumeric
½ tsp pepper
1 – 2 tab oil

Sauce:

1 ½ tab red curry paste
½ c peanut butter
3 – 4 tab tamarind paste
1 c coconut cream
2 – 3 tab sugar
2 tab fish sauce

Simmer all together for a few minutes.

This is an easy one I use mostly. Not too thick. Heat a can of coconut cream in a pot for few minutes. ( I use lite cream), then stir in a tbspn of red curry paste for 2 minutes. Then add half a cup of crunchy peanut butter, 1 tbspn soy sauce and 2tspns brown sugar and a pinch salt. Simmer for a few minutes.

You could thin it with a little stock or coconut cream

Peanut Sauce (The Best)

2 cloves of garlic chopped
2 tsp grated fresh ginger
2 tbsp each dark soya sauce and lemon juice
1 tbsp oil
3-4 drops hot pepper sauce
¼ cup brown sugar
2 tbsp peanut butter
¼ cup water

This is the recipe I use.

1T olive oil
2T crushed Garlic
2T grated ginger
1tsp corriander powder
2T soy sauce
2T Lemon juice
some hot chilli sauce (I used about 2T sweet chilli sauce)
1/4 cup brown sugar
2T peanut butter (I used crunchy)

put all ingredients into a small saucepan on med and heat through to dissolve the sugar
combine 2T cornflour with 1 cup water and add to the mixture, stir to thicken

it's so easy and tasty!
