Does anyone have any good recipes for chicken satay! Preferably like they have at Thai restaurants :) I've tried before with peanut butter but it's always very gluggy. Thanks in advance :)

I like this recipe, it has peanut butter in but I dont find it a problem. I have also made it with fresh peanuts crushed to virtually a paste, it is sooooo time consuming and I didn't find it any better than peanut butter.
500g chicken meat For the satay marinade: 6 cloves of garlic 3 stalks of lemongrass 10 shallots 100g galangal 50g ginger 1/2 tbsp turmeric powder 6 tbsp sugar 3 tbsp soya sauce 1 tbsp soya oil Salt and pepper to season
1 Blend the garlic, lemongrass, shallots, galangal and ginger into a paste and set aside. Combine the remaining ingredients then mix with the paste. 2 Take chicken meat (leg or thigh) and cut into 2cm pieces. Mix with the marinade and leave for a few hours, or overnight for the best results. 3 Thread the meat on to bamboo skewers and cook over grill or on the barbecue until cooked through. Garnish satay skewers with peanut sauce (below) for dipping.
For satay peanut sauce: 3 peeled onions 3 candlenuts 2 stalks of lemon grass 6 cloves of garlic 200g ginger 200g pineapple, blended into a smooth paste 120ml oil for cooking 5 tbsp chilli paste

Here's one that doesn't use peanuts at all.
Thai Chicken Satay 10 12 skewers
2 tab Thai red curry paste 1 tab peanut oil 400 ml coconut cream 1 tab grated palm sugar 1 tab fish sauce 6 kaffir lime leaves shredded 6 skinless boneless free range chicken breasts
In a shallow pan fry paste in oil a few minutes, add coconutcream, simmer 5 min.Add sugar, fish sauce & lime leaves, simmer 15 min uncovered.Cool.
Cut chicken into cubes, thread on skewers, pour sauce over.Marinate 1 – 4 hours.Brush more marinade over as they cook.

And here's another.Thai Satay
500g chicken, beef or pork, sliced thinly
Marinade:
2 cloves garlic, crushed 3 tab coconut cream 1 tsp ground coriander 1 tsp ground cumin ½ tsp salt 1 tsp tumeric ½ tsp pepper 1 – 2 tab oil
Sauce:
1 ½ tab red curry paste ½ c roasted peanuts, very finely chopped 3 – 4 tab tamarind paste 1 c coconut cream 2 – 3 tab sugar 2 tab fish sauce
Simmer all together for a few minutes.

Palm sugar is made from the sap of sugar palms.It usually comes in flat pale pink discs and can be grated or crushed or chopped.You can buy it at any Chinese food market.If you can't find any use white sugar, but it's worth searching out as it has a lovely flavour.
