Have an excess of Bananas what can I bake?

you can freeze the bananas(peel off skin first) then when you want to bake them them, you have some.

BANANA LOAF.
115g butter,
1 cup sugar,
2 beaten eggs
1&1/2 cups flour,
1/2 tsp baking powder,
1/4 cup milk,
1 tsp baking soda,
2 mashed bananas.

Cream the butter & sugar, add the eggs & mix well.
Add the flour & baking powder, & mix very briefly.
Bring the milk just to the boil then add in & stir the baking soda to dissolve it.
Add the frothy mixture to the loaf mixture & stir it in.
Lastly stir in the bananas.

Banana chocolate loaf

160g butter, softened
1 cup sugar
1 egg
2-3 mashed bananas
1 cup flour
2 tsp baking powder
½ cup oats
½ cup chocolate bits

Preheat oven to 180°C. Cream the butter and sugar. Add egg and
beat well. Fold in the remaining ingredients and spoon into a baking
paper-lined loaf tin.
Bake for 35-40 minutes or until golden and an inserted skewer comes out
clean. Cool on a rack and store in an airtight container.

Put the mixture into a greased and base baking-paper lined loaf tin.
Bake at 180°C for about 1 hour.

then add
2 cups white flour
11/2 tspbaking powder

Beat till nice and smooth
bake 170 degrees for 1 hr I

Banana cupcakes
1 dozen
Ingredients:
1 super ripe mashed banana
3Tablespoons melted butter
4Tablespoons sugar
1 egg beaten
1/4 cup milk
1 cup white flour
1/2 cup wholemeal flour
1 1/2 teaspoons baking powder

Lemon Cream Cheese Icing (optional)
60g cream cheese (about 4 tablespoons)
30g butter (about 2 tablespoons)
1 cup icing sugar
1 teaspoon lemon juice
1/2 teaspoon lemon zest
Directions:
Add egg and sugar to the melted butter and beat.
Stir in the mashed banana and milk.
Combine the dry ingredients in a separate bowl then add to wet mix.
Just gently mix until there are no lumps...don't over mix!
Spoon into greased muffin tin and bake at 220°C for 10 minutes.
Test by stabbing centre of a muffin with a metal skewer or knife, if it comes out clean then it's cooked.

Allow muffins to cool before icing.
Icing is super easy just combine all ingredients and mix well.

Thanks Pam, I normally freeze them, which have done but I have 8 bananas to use that were frozen, might try the loaf recipe.

Make an ordinary custard,using custard powder.When cooked beat in the yolk of one egg,add a mashed banana.Place in a piedish and top with a meringue made from the egg white beaten stiff with 1 Dspn sugar.Bake in slow oven untill meringue is cooked.

two ideas I like

* Chocolate & Banana Muffins ,Alison Holst’s recipe in ‘Marvellous Muffins’ uses 1 cup mashedbananas and half a cup choc chips (I use chopped block chocolate) I wrap them in gladwrap & freeze themfor later use.

* White Chocolate and Banana Teabread. can freeze pieces in gladwrap for later (ingredients include 3 eggs; 3 small very ripe bananas, 150 g white chocolate chopped into small pieces, plus 50g extra white chocolate for decoration )

The Most fabulous Banana Loaf recipe I have tried.
GARY RHODES’ BANANA BREAD CAKE
You can top this with nuts before you bake but not really necessary.
MAKES 1 x 900 g (2 lb) Loaf
3 Large Ripe Bananas (over ripe are even better)
225 g (8 oz) Self Raising Flour
175 g (6 oz) Castor Sugar
100 g (4 oz) Butter
2 Eggs
2Tablespoons Golden Syrup OR Black Treacle
A Pinch of Salt
PREHEAT OVEN TO 150C.
Mash bananas until smooth.Beat in all the remaining ingredients until completely combined.Can do this in a food mixer or processor.
Spoon the mixture into a greased loaf tin and bake for 1.1/2 hours until risen and firm to touch.
Leave to rest for 10-15 minutes before turning out of the tin.
EXTRA:Can melt chocolate for topping or the ultimate finish… serve with Vanilla Ice-Cream and Chocolate Sauce
