I have been given a bag of coconut flour but am unsure exactly what I can do with it. Any ideas greatly appreciated thanks.

On the NZ website Low Carb Cooking in Style there is an excellent recipe for cheese muffins which uses coconut flour.It is also handy as a low carb thickener for casseroles and as a coating for "breaded" fish or chicken breast.
