Coconut Whiskers Recipe (Alison Holst)

Does anyone have this recipe?My daughter used to make it years ago but I have misplaced the book.It was one of those smallish ones like the marvelous muffin books.coconut, egg whites, sugar were the main ingredients.TIA

Coconut Whiskers (from book - ‘Alison Holst’s Best Baking’ )

For about 20 whiskers

50g butter
1/2cup sugar
1/2tspn vanilla
1 large egg
11/4-13/4 cups desiccated coconut*

* use either 11/4 cup fine coconut, or 11/2 cups medium coconut, or13/4 cups thread coconut

Turn oven on @ 180C or 170C if using a fan oven.

Melt the butter in a pot or microwave dish.
Take off the heat, add the remaining ingredients in the order given and stir with a fork until evenly mixed.

Use two teaspoons for shaping - take a spoonful of the mixture and push it on to a non-stick sprayed orelse baking paper covered oven tray with the other spoon.

(Biscuits will be the same shape after baking. Either leave them shaped like a haystack or flatten them with your fingers or the back of a wet spoon.)

Bake for 12 - 15 minutes.
Lift from baking tray to a cooling rack straight away.

Yum.. I know these as Coconut Haystacks - they taste almost juicy and are truly delicious..
