We have just made one of these for lunch boxes...

Easy coconut loaf recipe
1 1/2 Cups Flour
1 1/2 Cups Coconut
1 1/2 Cups Sugar
1 t salt
1 t Baking Powder
1 Cup Milk Mix together.

Put in loaf tin sprayed or buttered, no need to line at 180 degrees for about 40 -50 minutes. I always cook this in a ring tin so the cooking time is less. This is very easy not to mention tasty.
