Hi timboo, sure... more than happy to share.
Apple Cinnamon Muffins
50g butter 2 eggs 2 cups Freshup spiced apple 1/4 cup caster sugar 1/4 cup milk 2 cups s. r flour Topping: 1 tbsp caster sugar 1 tsp cinnamon Melt butter, lightly beat the eggs. Combine butter, eggs, apple, sugar, milk, s- ifted flour. Stir only until mixed. Spoon into greased muffin tins. Combine caster sugar and cinnamon. Sprinkle over top of muffins and bake at 180C for about 15 minutes.
The Freshup spiced apple used to come in a can, I am not sure if it is still around ( I have had this recipe since 1993! ) if you cant find it, use any canned apple which is diced and add a little cinnamon to it.
