Two-Minute Cup Cakes (Microwave)

Serves 8
INGREDIENTS
60 g butter
1/4 cup caster sugar
1 tablespoon Cadbury Bournville Cocoa
1 egg, beaten
1/2 cup self-raising flour
8 Pascall marshmallows

1. Melt the butter in a large microwaveproof bowl on High (100% power) for 30 seconds.

2. Add the sugar and cocoa. Mix well to dissolve any lumps.

3. Add the egg and flour, and stir through with a fork.

4. Spoon the mixture into eight triple thickness paper patty pans. Place around the edge of the microwave turntable and cook on High for 1 minute.

5. Place a whole marshmallow on the top of each cup cake. Cook on High for 30 seconds or until the marshmallow begins to melt. Remove from the oven immediately.

jase320, thank you for posting that recipe here in Recipes too - it's as appropriate for it to be here as much as anywhere else and it's sure to be a useful recipe for anyone who finds that at short notice they have to meet the "please bring a plate" request. :-))
