This is an old recipy from the city cake company . yummy and moist!

Carrot Cake
2 cupFlour
2 tspBaking Soda
1 tspMixed Spice
1 tspCinnamon
1 tspSalt(optional)
4Eggs
1/3 cupWhite Sugar
¾ cupFirmly Packed Brown Sugar
2 TbspFirmly Packed Brown Sugar
1 cupCanola Oil
200 gramGrated Carrot
135 gramWell Drained Tinned Crushed Pineapple
120 gramChopped Walnuts

Sieve the first four ingredients. Mix the rest of the ingredients together and then add to the flour mixture. Beat for 2-3 minutes. Pour into a lined 20 inch round tin. Cook for 1 ½ - 2 hours at 150c. Remove from tin when cool

Surprise Chocolate Cake

3 Eggs
1 cup White Sugar
1/2 cup Brown Sugar
1 tsp Vanilla
125gSoftened Butter
½ cupPlain Yoghurt
2½ cup Flour
¼ cup Cocoa
2 tspBaking Soda
250g Chocolate Bits
250gGrated Pumpkin
1 tspCinnamon
½ tspMixed Spice

Mix eggs, Sugars and Vanilla with a beater. Blend in Butter and Yoghurt until smooth. Fold in Chocolate, Pumpkin and combined dry ingredients until combined. Spread into lined 28cm cake ring. Cook for 50 minutes at 180C.

This is from the old Globe cafe in Auckland, I love it. The chocolate, pumpkin and spices blend wonderfully!

GINGER GEMS
From Mondo Cafe in Plimmerton

160g golden syrup
110g butter
1 cup standard flour
1/2 cup brown sugar
1/2 tsp baking soda
1 tsp baking powder
1 Tbsp ground ginger
1/2 tsp ground cinnamon
pinch of mixed spice
pinch of nutmeg
1/2 cup milk
1 egg (lightly beaten)

Preheat the Gem Tin in the oven to 180C

Melt the butter and Golden Syrup together in the microwave.

Put all the dry ingredients in a bowl and work out lumps with fingers or fork.

Put milk and egg into melted butter and syrup.

Pour wet ingredients into dry and mix well.

Put a nob of butter into each gem mould and spread around.

Nearly fill each mould and bake for 20 - 25 mins

I would love to know the recipe for the macadamia carrot cake that the Macadamia Nut Tree farm make.It is the mostest moistest yummyest carrot cake that i have ever tasted.

Smoked Mussel Chowder

25 g butter
1 large onion, peeled and finely diced
2 stalks celery, finely sliced
2 tsp minced garlic
1 tsp celery seed
1 tsp dill seed
1 kg starchy potatoes, peeled
1 litre fish stock
2 cups frozen corn
1 cup cream
250 g Coromandel Smoking Co smoked mussels, diced

Heat butter in a large saucepan and gently cook the onion for 10 min until soft. Add celery, garlic, celery seed, dill seed and cook a further 2-3 min.
Chop potatoes roughly and add to pan with stock and simmer gently for 20 min or until potatoes are cooked
Mash potatoes roughly in the soup then add corn, cream and smoked mussels. Warm through and garnish with dill

Dixon Street Deli (Wellington) Chicken Teriyaki Salad

This is divine.I haven't made it yet because it sounds a little time consuming and expensive… but whenever I want to treat myself (this place isn't cheap!) I get this, and it so happened the recipe was actually in the Cuisine mag a few years back

500g chicken thighs or breasts cut into strips
juice of a lemon
3 cloves garlic
2 T soya oil

2 T each of Thai sweet chilli sauce/soy sauce/oyster sauce/sweet soy sauce/brown sugar
1 T fish sauce
1 t tamarind pulp or a square of solid tamarind

marinade chicken in lemon juice, garlic and soya oil overnight
place chicken and marinade in saucepan add remaining ingredients and simmer covered for 30 minutes. Resulting liquid should be thick – add bit of chicken stock if necessary

ADD 100g fried mushrooms.

Then cut broccoli, red & yellow capsicum, 3 courgettes, 1 carrot, 1 red onion into chucks and grill until crisp

Cook 400g soft egg noddles.

Mix everything together

and dont forget good training, gosh i recently went out to resturant for lunch ordered fish and chips, it was $22.00 - fish was pre-frozen and 1 small portion and when you wentr to cut with the knife and fork the fat ozzed out, i had a tummy ache all afternoon!

Quince Cafe - Lemon Shortbread

300g soft butter
1 cup icing sugar
zest of 1 lemon
3 cups sifted plain flour

Preheat over to 180. Cream butter and sugar and zest.Mix in flour.Form mixture into a ball.It will look dry but that is right. Roll out mixture on lightly floured bench.Cut into shapes.Place on tray lined with baking paper.Pick the shapes and bake for about 20 minutes.

for the person who posted previously about a Churros recipe I got this one off line.

Churros
1 cup water,1/2 cup unsalted butter, 2 Tablespoons granulated sugar, 1/4 teaspoon corse salt, 1 cup all-purpose flour, 3 eggs, vegetable oil for frying, confectioners sugar (icing sugar) for dusting.

1.In a medium saucepan combine water, butter,sugar and salt.bring to a boil over med-high heat.Reduce heat to low and sift in flour, stirring for 1 min

2.transfer flour mixture to a bowl of a electric mixer fitted with a paddle attachment.on low speed, add eggs 1 at a time, beating until incorporated after each addition.spoon mixture into a pastry bag fitted with a large open star tip.

3.Heat 4-5 inches of oil in a large Dutch-oven until it registers 160 degrees on a deep fry thermometer.holding pastry bag a few inches abouve the oil, swueeze out batter snipping off 4 inch lengths with a knife or kitchen shears.Fry flipping once until deep golden brown all over approx 4 min

4.using a slotted spoon transfer churros to a paper towel lined baking sheet to drain.

5. roll churros in confectioners' sugar
