lemingtons How about lemingtons cut in half to cause they are big enough and put cream on each half and sprinkle chocolate or somthing on them. Went to a party where they made little tiny lemingtons,they were neat.

Smoked Salmon Ribbon Sandwiches
50g softened butter 16 slices wholemeal bread 75g lemon and dill mayonnaise 1 thinly sliced large avocado 200g smoked salmon slices 1 tablespoon coarsely chopped dill 1 thinly sliced Lebanese cucumber salt and pepper
NOTE: This recipe makes 24 sandwiches and can be made 8 hours ahead. When preparing ahead, keep sandwiches moist by sprinkling with shredded iceberg lettuce before wrapping tightly in plastic. Remove lettuce before serving.
Spread butter thinly over one side of slices of wholemeal bread, then spread with mayonnaise. Arrange avocado over half the bread slices, top with smoked salmon slices, dill and cucumber and sprinkle with salt and pepper. Top with remaining bread slices. Cut crusts off each sandwich; cut into 3 fingers. Cover tightly with plastic wrap until ready to serve.

Roasted Pumpkin & Rocket Rice Salad
2 tablespoons olive oil 1.8kg pumpkin, peeled, chopped 1.2kg)medium grain (calrose) white rice 150g baby rocket leaves 150g parmesan cheese flakes salt and freshly ground black pepper
Gremolata dressing 180ml olive oil 2 tablespoons grated lemon rind 250ml lemon juice 1/2 cup coarsely chopped fresh flat-leaf parsley 4 cloves garlic, crushed salt and freshly ground black pepper
NOTE: This recipe serves 50 and can be prepared up to eight hours ahead. Toss all the ingredients close to serving.

Apricot Balls Rind of 1/2 to 1 Orange.1/2C caster sugar. 250g NZ dried apricots, chopped.1/4C orange jce. about 1+3/4 C fine desiccated coconut. Remove orange rind with potato peeler then chop finely with the sugar.Roughly chop the apricots with scissors, then pulse with orange & sugar mix till finely chopped. Add the jce then process again. Add a cup of coconut, process, then add more until the mixture is ready to be rolled into balls with wet hands. Shape, roll in coconut and refrigerate until firm. Can be frozen in a container for up to three months.
On another website I saw an excellent idea for party food - using disposable shot glasses, put some dip in each and then a selection of sliced veges eg cucumber, carrot, red pepper.That would also save the double dipping dilema.

A question to those who know more than I do!.I'm catering a wedding and as four guests are gluten free (Coeliac's) and a vegetarian guest I wanted to have a small separate table of foods available for these guests so that there is no cross contamination from spoons, etc and besides I want to make small quantities of g/f food as its too expensive to cater g/f for everyone especially if they dont require it.But my lovely helpful sisters say I cant do that!(My daughter, grandson & I are some of the g/f guests and I certainly dont want to see my lunch return two hours later LOL !)Any thoughts on the matter!cheers, Glenys
