cheese balls. 125g cream cheese 1/2 dessertspoon tomato sauce 1 tsp maggi onion stock 1/2 tsp finely chopped parsley 1/4 cup grated cheese 1/2 cup walnuts finely chopped.
Mix all together except nuts place in fridge 1hr to firm up.sprinkle chopped nuts onto greaseproof paper roll mixture into log or ball when firm then roll over nuts to coat outside.

Mix all together except nuts firm in fridge 1hr Roll into ballor log. thenroll and coat outside with either chopped nuts or curry powder.

bacon cob loaf. 250g cream cheese 1 cup cream 1 250gr pack bacon diced. finely chopped onion and a cob loaf.

Mix ingredients together, Hollow cob loafadd ingredientsto loaf cook in mod oven for 45 mins. ( the bread you take out to make the hollow can be cut into dipping size pieces and arranged around the tray with the cob loaf lightly brown these in the oven near the end of the cob loaf cooking)

dip~ Mexican five layered. can refried beans ( taco section of supermarket)
2 Mashed Avocadoes, Tub Sour cream 2-3 diced tomatoes grated cheese and cayenne pepper,corn chips.

spread can of refried beans in bottom of bowl. next add layer mashed Avocado followed by layer of sour cream, next layer of diced tomatoes, and top with layer of grated cheese and sprinkle some cayenne pepper on top. serve with corn chips to dip.

Dip Egg Curry. 250g cream cheese, 1/2 cup mayonaise,1/2 cup cream,4 rashers of bacon diced and cooked,1 onion diced and cooked, 1tsp curry,1/2 tsp dry mustard,1/4 tsp paprika, hard boiled egg cubed, salt and pepper.
Mix cream cheese,mayo and spices then add cooked off bacon and onion fold in cubed egg chunks. Best made 1 day before to improve flavours.

Mini Fudge Muffins

180g dark chocolate, chopped
125g butter, chopped
2 teaspoons dry instant coffee
80ml water
75g firmly packed brown sugar
1 egg, beaten lightly
2 tablespoons Kahlua or Tia Maria
75g plain flour
2 tablespoons self-raising flour
icing sugar, for dusting

NOTE: This recipe makes 24 cakes and can be made three days ahead. Store in an airtight container.

Preheat the oven to slow (150C). Grease a 24-hole mini muffin pan.

Combine the chocolate, butter, coffee, water and sugar in a medium pan, stir over a low heat for about five minutes or until the chocolate is melted.

Remove from the heat and transfer to a large bowl. Stir in egg and liqueur then gradually stir in the combined sifted flours; mix well. Divide the mixture among the prepared pan holes. Bake in a slow oven for about 15 minutes. Stand cakes in the pan for 10 minutes before turning onto a wire rack to cool.

Just before serving, dust with sifted icing sugar.

Suitable to freeze. Not suitable to microwave.

Rosti With Smoked Salmon

Perfect for a gathering, this recipe will make 24 mini potato rosti.
800g potatoes, peeled
15g butter, melted
1 tablespoon finely chopped fresh dill
125ml olive oil
200g crème fraîche
200g smoked salmon, sliced
dill for garnish, extra

Coarsely grate potatoes, squeeze out excess liquid. In medium bowl, combine potato, butter and dill.

Heat a little of the olive oil in large non-stick frying pan. Place an oiled 5cm-round metal cutter in pan and fill with 1 tablespoon of the potato mixture, pressing with back of spoon to flatten.

Remove the cutter carefully (it will be hot) and repeat with remaining potato mixture and olive oil.

Cook rosti until golden on each side; drain on absorbent paper, cool.

Place 1 teaspoon of creme fraiche on each rosti to serve; top with salmon and extra dill.

Do Ahead
The rosti can be made several hours ahead; assemble close to serving time.

stuffed mushrooms I don't have measurements, but I can tell you what I put in them.And these always dissapear from the plate between the kitchen and the table.Clean as many mushrooms as you wish, pull stems from centre and place in food processor along with garlic,onions, cooked bacon, parsley (and whatever other herbs).Can add capsicum, olives, gherkins, dried apricots, or anything else you fancy.Whizz, trying to not over mix.A little chunky is nice.Fry gently untill soft.Grate or wizz in processor cheese.Add to warm onion mixture.Add breadcrumbs and either an egg or a little milk and mix together.Add salt & pepper.Place all mushrooms in a container so that hole in centre is facing up.Fill holes using a teaspoon with mix.Will keep for a couple of days till needed, in fridge.Put on an oven tray and cook till mushroom tender.May need to spray with a little cooking oil if drying out.So yummy!

litlle bread baskets I get a couple of loaves of bread, remove crusts and flatten with a rolling pin.Then brush lightly with a little melted butter and push into muffin trays and bake in oven until lightly browned.Whatch closely or they'll burn fast!Then once completly cooled, I freeze them so I always have some on hand.I fill with left over chilli con carn, with a little square of cheese and maybe chopped capsicum and toasted.Serve with sour cream.

bread basket ideas. Other filling ideas; Left over fish pie filling. 1/4 cup sour cream, 1-2 tsp mustard, 2 tsp chopped chives,all mixed together and then topped with salami/ham/roast beef etc and maybe a little relish or onion marmalade. 100g cream cheese,1/2 large mashed avocado, 2 Tbl sour cream, 2-3 tsp lemon juice, 1-2 Tbl finely chopped coriander, 1/2 tsp ground cumin, salt and pepper, beat together till smooth, top with finely sliced smoked salmon and extra coriander or parsley.And basically anything you'd put into val au vaunts, (sorry can't spell that, lol)
