Stuffed Lettuce 1 whole nice fresh lettuce, 1 250g tub cream cheese, 3T diced tomatoes, 2T diced Capsicum (all colours), 3T grated carrot, 1T chopped onion (white or red), 1T Worcester Sauce or chilli sauce (or both), 1/2t cracked pepper, pinch salt. Mix together all ingredients then peel and wash lettuce leaves. Spoon mixture into leave and roll. You can slice this up so it looks like sushi or serve as a whole roll on a plate.

awwwwww come on guys !!!!!! brianmac has put a lot of time and great ideas into this thread, I for one really appreciate and would love to see others add their suitable recipes etc.... I'm still keen on some more fancy finger food ideas for our wedding starters.

Great for hors d'oeuvre - or for dessert. depending on the type of pasty used. And you can make the bases in advance. Use purchased frozen SHORT pastry - not flaky or puff pasty. Use sweet short pastry for dessert; savoury short pastry for savoury goodies. Roll out the pastry and cut into bite size circles. it's makes a lot. a biscuit cutter gives a nice crinkled look edge. Bake as per packet instructions till firm and only justbeginning to colour. Cool an a cake rack till completely cold, then freeze till needed. For savoury toppings, use whatever you prefer. You could spread with a thickish layer of cream cheese mixed with sweet chili sauce, then top with a curl of smoked salmon, and a tiny sprig of parsley. Mix the cream cheese with some mint jelly, and top with avocado slices. Use anything you want. caviar, cherry tomato slices, salmon, sliced surimi, different fresh herbs, avocado, kiwifruit, etc.etc.

For sweet circles. use cream cheese also - add some icing sugar if you want. or use firmly whipped cream. top with your preferences. fresh passionfruit pulp, kiwifruit slices, fresh berries, well drained cooked/canned sliced peaches, apricots, etc. etc. Spread them in single layers on trays - they look wonderful and taste great too. Enjoy!

Sweet treats I made some of these on teh weekend.I got some flaky puff pastry - cut each sheet into 4 triangles.Put some frozen raspberries and a square of dark chocolate on each piece and then folded it all up like an envelope.Into a 180 oven for about 15 minutes and wow - so good!
Also for savoury stuff - crostini with hot beef (from the deli) and mustard cream - mix 1T dijon, 1 T wholegrain mustard with apot of cream cheese.THese are always eaten quick smart.
