I do an orzo (pasta shaped like rice) salad with hot smoked salmon and dill through it with lemon juice and zest and baby spinach leaves which is very tasty.

Wat about the mini samosas, spring rolls, wontons, not exactly healthy but a nice little treat most ppl don't have too often
something we like are smoked salmon and cream cheese parcels - enclose the fish and cheese in squares of filo pastry. . either triangles or spring roll fashion. brush with butter and bake till crisp. You can use the low fat cheese.
Another lovely one is buy a french bread, cut into slices and toast in oven, top each slice with a dollop of pesto, and top with slices of salami of your choice, make a cut halfway in - twist the slice and place on pesto - these look really nice and taste even better. . but they can't be made too far ahead or they go too soft
