I am just about to make this one:Plum Crumble Cake:175gm butter, 3/4c caster sugar, 3 eggs lightly beaten, 1 1/2c sr flour, 1 tsp baking powder, 1c ground almonds, 6 ripe plums stoned and halved. Topping: 2T flour, 1/4c rolled oats, 25gm butter, 1/4c brown sugar, 1/4c blanched almonds chopped. Beat together butter & sugar until creamy. Add eggs 1 at a time beating well after each. Stir in flour, baking powder & almond meal until combined. Spoon mix into a lined 22cm tin. Arrange plums cut side up on batter. Mix together topping ingredients by rubbing butter into flour and stir everything together. Sprinkle topping over batter & bake @ 180°C for 50-60mins.
