Mmm plum 'ice cream'

made annabel langbeins strawberry cloud cake filling today.
used tartish stewed plums in stead of strawberries.
i used it on top of a rhubarb coconut cake.
i think it will become a regular thing at my house!

That filling makes a great dessert without any base.

Rhubarb and coconut cake

1/2 cup canola oil
1/2 cup yoghurt (any)
2 large eggs
1 1/2 cups sugar
pinch salt
1 tsp vanilla
1 1/2 cups SR flour
1 1/2 cups coconut
1 1 1/2 cups finely sliced rhubarb (150-200gms)

TOPPING2 tbsp sugar mixed with 1/2 tsp cinnamon

put the oil, yoghurt, eggs, vanilla, sugar and salt inot food processor or large bowl. process or whisk til pale and creamy.
add flour and coconut and mix.

line bottom of 23cm springform tin with baking paper.
spread in cake mix and top with sliced rhubarb. sprinkle with sugar and cinnamon mix.

bake 180 deg C for 50-60min.or until skewer comes out clean.let cool for 10 min before removing from tin.

I found it took over and hour to cook, and it sinks a little in the middle.
