Hi I would like to know if a thai green curry , coconut cream base, is suitable to freeze? If so , would you start defrosting if fridge night before you want to reheat and serve? Any other tips. TIA

It should be okay. The sauce might separate a little on thawing and this can be disguised by adding a little more coconut cream and stirring it in before you serve it.
If the curry is a commercially manufactured one it probably won't separate as it will contain stabilisers and thickeners.
