Yesterday I made 10 jars of green tomato jam. The mixture wouldn't thicken so I drained off about a litre and a half of the syrup, leaving the fruit behind. That did the trick and it thickened up beautifully, but I am now left with the unused syrup. Hubby suggests turning it into toffee but I'm wondering if I can use it as a filling for a tart. Any help appreciated, the Scot in me hates the thought of wasting it...
