I read to get the sugar to egg ratio right, you weigh the whites and double the weight in sugar, which is best if it's half caster and half icing sugar.

Right I have got one in oven using the above icing sugar recipe. Read that article while it was being beaten. Hopefully it turns out great but won't know until Christmas day. Will leave it in oven until morning and then hopefully can transport it without too much damages tomorrow afternoon.

I have made many pavlova recipes in my time and none have failed, sadly with the exception of Chelsea Winters recipe, I had saved it for a special family christmas last year that we had guests for, it was a complete disaster and I cried. I made it again the next day but again it failed. So from now on I will stick to my other recipes, I will not try Chelsea Winters one again (sorry Chelsea).
