I have heaps of beetroot and wondered if there are any recipes I could do which would freeze well, I dont want to bottle it. Thanks.

what about making beetroot relish... . i use the one out of the edmonds cookbook and share it among friends... its so delish on sandwiches with cheese.

Beetroot Chutney (Aunt Daisy) 3lb beetroot 1&1/2lb apples 2 onions 1tsp salt 1pt vinegar 1/2tsp ground ginger 1/2lb sugar juice of 1 lemon Cook beetroot in salted water for 1 hour. Dice beetroot & apples & mince onion. Mix all ingredients except the beetroot. Boil 20 mins. Add betroot & boil for 15 mins.
