Hi this is a very nice recipe INGREDIENTS 300 G MIXED SALAD LEAVES 150G GREEN BEANS 200G COOKED BEETROOT CUT INTO 2CM CUBES 4 TABLESPOONS OLIVE OIL 1 TABLESPOON GOOD QUALITY RED WINE VINEGAR 100G SOFT GOAT CHEESE CRUMBLED METHOD WASH THE SALAD LEAVES AND DRY WELL. COOK THE BEANS IN BOILING SALTED WATER FOR 3-4 MINUTES UNTIL JUST TENDER THEN DRAIN REFRESH IN COLD WATER AND DRAIN AGAIN.PUT THEM IN A LARGE BOWL WITH THE SALAD LEAVES AND BEETROOT.WHISK THE OLIVE OIL VINEGAR AND SOME SEASONING TOGETHER TO MAKE A DRESSING. TOSS WITH SALAD THEN SPRINKLE WITH GOATS CHEESE ENJOY JUDE

I make a yummy one with roasted beetroot, however don't have a recipe as it is one I have in my head. Peel & cutbeetroot into small wedges, roast in hot oven with a little olive oil and garlic and red onion wedges.Towards end of cooking drizzle maple syrup or honey over, just watch it as it will burn quite quickly. Chill Deglaze pan with fresh orange juice, then whisk in balsamic vinegar, olive oil, salt pepper and sugar to taste. Chill When ready to serve mix together roasted beetroot & onions, and chopped oranges. Mix dressing through quickly, pile on plate and crumble creamy blue cheese over top with a little sprinkle of flat parsley. Hope you enjoy it!
