Any brilliant, tasty and relatively easy salad ideas to make for a crowd? Any suggestions will be happily received. I am making a green salad but need other ideas.

Recipe for roasted vegetable salad - sounds yummy. Have tried a few but just not quite got the right taste.

I love roast vege with the cashew nut dip stirred through as the dressing (the one you can buy in the deli section of the supermarket)

A tip from TM MB - when you make your salad, put into a large zip lock bag and put into the fridge. Much more storage room in your fridge using this method

Toadfishes Brown Rice Salad

1 cup brown rice
1 3/4 cup water
1/4 cup soya sauce (light if available)
1/2 onion finely chopped

Cook the rice in the water & when cooked & still hot add the soya sauce and finely chopped onions let cool (a couple of hours preferably overnight)

Add the following ~
1 red pepper chopped
2 Spring Onions
1/2 cup roasted peanuts chopped ( I leave them whole)
1/2 cup each of roasted sunflower and pumpkin seeds and sultanas.

Dressing:
1/4 cup olive oil
2 tbsp lemon juice
1 tsp grated lemon rind
1 clove garlic crushed
1 tsp fresh ginger
1 tsp honey or Sugar

Mix and pour over salad. Mix well.
I have the dressing in a jar, the nuts etc in a bag and the rice in the fridge and just mix together last minute.

If you are having lots of other salads I would triple this recipe for 50 people.

My Pasta Salad is always popular wherever we take it - love using fresh capsicums, cherry tomatoes, cranberries, almonds etc to make a pretty salad! Definitely my go to - take a plate to a BBQ salad

Surimi Coleslaw

A bag or two of undressed coleslaw (depending on the number in your crowd)
Surimi
Best Foods Mayo

Open bags of coleslaw and pour in big bowl. Rip up or chop up surimi so there is a decent amount mixed through the coleslaw. Add Best Foods Mayo to cover.

Sure easy and totally yum!

There are trabazillions of salads using veges, fruit, salad veges a mix or some or all, nuts, herbs, grains and seeds along with a myriad of dressings. Google away and you will be amazed!

Here's a nice orzo salad and makes a large bowl. Just made it today for the fourth time since I got this recipe.

ORZO, SPINACH AND PINENUT SALAD
500g package uncooked orzo pasta
~3/4 of a bag of baby spinach leaves, finely chopped
Small block of crumbled feta cheese
1/2 red onion, finely chopped
3/4 cup pine nuts
2-3 Tbsp chopped fresh basil (or 1/2 teaspoon dried basil)
1/4 teaspoon ground white pepper
~1/4 cup olive oil (more if it's too dry)
~1/2 cup balsamic vinegar
directions:
Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water. Transfer to a large bowl and stir in spinach, feta, onion, pine nuts, basil and white pepper. Toss with olive oil and balsamic vinegar. Refrigerate and serve cold.

Roasted vegetable and couscous, very good.
Confetti salad - red kidney beans/bean salad/your fave beans, corn kernels, tomato (fresh or tinned diced tomato), capsicum and red onion all cut to the size of the beans. Drizzle over olive oil, lemon pepper and garlic salt - don't let it get too wet. Quick and easy and yummy.

Roasted veg salad - I cheat and use master foods roasted veg sprinkle.
Or special potato salad - with bacon and cheese and spring onions.
Tuna pasta salad.
Rice salad - rice, tomato, corn, spring onions, capsicum in soy sauce.
Tomato, mozzarella and basil in olive oil.

The secret is in the dressing, imo.
I use home made Aoli with heaps of fresh herbs, parsley in particular & a good bit of garlic.
Sometimes I use a dash of balsamic in with the oil when roasting the veges & always include red capsicum & whatever else I have on hand . kumera, parsnip, onions, potato, pumpkin, beetroot . the more the merrier.
I don't always serve it warm but never straight from the fridge, either.

A fantastic one. well we think so lol is Chopped avocado, sliced mushrooms and mix with thousand island dressing. Yeah I know doesnt sound all that good but it is very popular. You can put carrot strips into it as well or even shrimps/prawns.

WW balsamic dressing, warmed, is wonderful on roast vege salad.
