Made this the other day. Easy and very tasty. I thought using a whole red curry paste packet would be too hot but it is more creamy and peanutty. I used Pics peanut butter. One pork fillet was plenty for 4 people.
It really is yum. I also added a tin of bamboo shoots.

Great recipe. going to increase the red curry paste to 5 tbs next time as the peanut butter tended to kill the curry.
