CHERRIES ( HOW TO PICKLE IN ALCOHOL )

WE HAVE SOME NICE FRESH CHERRIES AND WOULD LIKE TO PRESERVE THEM IN SOME SORT OF SPIRITS. ANY IDEAS PLEASE.

They would be nice in Cherry brandy.You can get a nice one (not expensive) at The Mill.

Rum.

We have tried in vodka, gin and rum on different occasions. Rum is the way to go.

We made damson vodka last year, oh my god it is awesome. Takes 12-18 months but we are drinking it after 12 months and when we took the damsons out of the vodka we stored them in a jar in the fridge and they were so nice. As vodka is pretty neutral flavoured it totally took on the damson flavour.
We used a Hugh Fearnley-Whittinstall recipe.
Damson's are ripening now so I am sure we will make another batch.
ps. I don't normally drink vodka but this is something special.

We have done the same with mandarins. Large jar piled high with mandarins and vodka to the top.

Cherry brandy
pierce fresh cherries with a toothpick, add the weight of cherries in sugar into a jar top up with brandy store away for at least 4 months
