Coconut Flour

Anyone used coconut flour before!Do you have any recipes to share!Preferably with very little sugar in it too.

I think the low carb web site might have some recipes.It's very absorbent and can be used to thicken sauces and stews if that's what you like.I haven't tried it in vege fritters but I imagine it could work quite well as long as you use enough egg to hold it together.

I use it.I'll have a look for some recipes.It is quite sweet in it's own right and doesn't need much sweetener.

I just learnt that soaking the flour gives a better texture.

I think www.coconutresearchcenter.org should have some recipes.
I use it quite a bit. It does require a few eggsbecause it doesn't have gluten it needs another protein source tomake it rise and give a good texture.
I have tried and tested recipes for pancakes, muffins, bread, pizza dough, brownies and biscuits. Great way to get more fibre into your diet with the health giving coconut. (just realised I haven't tried all of these recipes)

Thank you everyone.I lean towards the more savoury foods.It would be nice to find good recipes for a pizza base with coconut flour, quiche etc.As we don't eat sugar, just the occasional bit of natural honey, sweet baking isn't our thing.The only thing I miss from my wheat eating days is scones.I think it was all the lovely butter I could put on it.So would love to find a good scone recipe if that is possible.Will keep looking.
