Best spring dishes

I like to try and cook seasonally. What is your top spring dish!
Currently I have:
Salmon, new potatoes and asparagus
Aubergine parmigiana
Spinach and ricotta cannelloni
Stuffed mushrooms
Risotto
Quiche
Vege pizza

Hit me with your best 'light options' that reflect the season!

No season here, only one I'd like is Salmon minus asparagus.

ASPARAGUS PANCAKES

PANCAKE BATTER:
¾CUP FLOUR
½ TEASPOON SALT
1 TEASPOON SUGAR
1 EGG
1 CUP MILK
1 TABLESPOON OIL OR MELTED BUTTER

FILLING
ASPARAGUS SPEARS – PRE COOKED

SAUCE:
2 TABLESPOONS BUTTER
2 TABLESPOONS FLOUR
¼ TEASPOON SALT
1 CUP MILK
½ CUP GRATED CHEESE
PAPRIKA

PANCAKE BATTER – SIFT FLOUR/SALT, ADD SUGAR,EGG, MILK OIL OR MELTED BUTTER AND STIR WELL TO MAKE A THIN BATTER.
GREASE & HEAT FRYING PAN, POUR IN BATTER, WHEN SET TURN.

FILLING – ROLL UP ABOUT THREE SPEARS OF ASPARAGUS IN EACH PANCAKE AND ARRANGE THEM SIDE BY SIDE IN A SHALLOW OVEN PROOF DISH.

MAKE CHEESE SAUCE, POUR OVER PANCAKES, SPRINKLE WITH PAPRIKA AND HEAT THROUGH AT 375F 15 – 20 MINS.

SERVE AS ENTRÉE OR AS A LUNCHEON DISH WITH A GREEN SALAD

The first spring dinner tonight.Snapper fried in butter, finished with capers, butter, dill and lemon juice; asparagus with butter; baby carrots with tarragon and butter.(Lewis Road butter of course).Heavenly!
