I think with the amount of cheeseyouwouldn'tneed butter.

Three cups of flour, 3 tspns BP, salt, a cup or so of milk (or milk and water) and as much cheese as you can get in there - around a cup and a half in this house. Adding other things, like grated apple (instead of the sugar!) or fine chopped onion, or herbs, or bacon - or leftovers, can transform a cheese scone from heavenly to magnificent.

I reckon it's all in the mixing. As little mucking around as possible.
