From “Alison Holst’s New Microwave Cookbook” (1988) CONFETTI MEATLOAF "This mixture microwaves especially well and is popular hot or cold." For 8-10 servings: 500g mince 450g sausagemeat 1 onion, chopped 1 red pepper, chopped 1 green pepper, chopped 1 tsp each ofcurry powder,herb stock granulesandbeef stock granules 1 egg 1 cup fresh breadcrumbs (about 2 slices bread) about ½ cup Savoury Crumbsorfine, dry breadcrumbs
Mix all except the last ingredient.With wet hands, form mixture into a large, sausage shaped roll. Roll in Savoury or plain crumbs (see above) and place on a flat dish.Stand this on an inverted plate so that the meatloaf is raised from the bottom of the oven. Cook on 70% power for 20 minutes.Let stand for 5-8 minutes if serving hot, or leave to cool. Variation:Replace peppers with1½cups thawed mixed vegetables and up to 1 cup chopped celery, if desired. Note:Recipes based on a 650W microwave and 70% power = 450W.:-))
Edited to add the recipe from the same page/book for SAVOURY CRUMBS 1 tbsp butter 1 cup fresh breadcrumbs 1-2 tbsp chopped parsley (optional) 1-2 tsp finely chopped herbs (optional)
Melt the butter in a fairly large, flat-bottomed microwave dish on High (100% power) for about 30 seconds.Add the breadcrumbs and finely chopped parsley and herbs if you want them for extra colour and flavour. Spread the crumbs evenly, then cook for 2-4 minutes, until the crumbs turn golden brown. These crumbs make a good coating for any sausagemeat mixtures which are to be served without a sauce e.g.Confetti Meatloaf and Scotch Eggs.:-))
