I had a hot cheese dip recently at a Mexican resturant.Think it was probably a cream cheese base with other ingredients mixed in, and then had smoked paprika sprinkled on top and grilled.It wasn't hot in flavour, but served warm with corn chips. Would love any ideas/recipes for hot cheese dips to serve with corn chips. Thanks!

Corn, bacon, capsicum, onion, leek, garlic, jalapeno . and heaps of cheese. Oh and paprika. Plenty of paprika. TOO DELICIOUS.
Have been making this one way too much recently, it is UNBELIEVABLE. And stupidly easy to put together, too! Really, really easy to sit down and eat the entire thing between two people. Almost dangerous.

I make this version
1/2 red papper,finely chopped 1 tsp crushed garlic 1-2 tomato sauce Saute the 3 ingredients until pepper softens. Then add 125g sour cream (can use light) 125gcream cheese (can use light) 1/2 cup grated tasty cheese Stir until melted and well combined.
Serve with vege sticks & corn chips.
