Feijoa and Date Loaf

1 cup peeled, diced feijoa
100g dates, roughly chopped
250ml boiling water
230g sugar
50g butter
1 tsp vanilla
1 egg, beaten
270g flour
1 tsp baking powder
1 tsp baking soda

- Put feijoas, dates, boiling water, sugar and butter in a saucepan.
- Bring to the boil and simmer for 5 minutes.
- Cool thoroughly then stir in the vanilla and the beaten egg.
- Sift together the dry ingredients and very carefully fold into the cooled fruit mixture working just enough to moisten the dry ingredients.
- Do not overmix.
- Spoon the batter into a well buttered and floured loaf tin (large) and bake 180degC. for 50 to 60 minutes or until tested.

homemade Feijoa Wine, you need: 5kg of feijoas (scoop out the flesh, freeze, thaw then squash it), 6 litres of boiling water and 2 camden tablets (from home brewing stores). Place in a big bucket with a lid and stir twice a day for three days. Then strain into another bucket (cover it with cheesecloth to keep the bugs out) or a large fermenting bin (fitted with an airlock if possible) and add one sachet of wine yeast and 2 teaspoons of yeast nutrients (both from home brewing stores), plus 4kg of sugar and another 2 litres of water. Leave until it stops bubbling... which could be a month, or several. Then bottle.

Little Feijoa and Coconut cakes These are really yummy.
100g butter, softened, 1/2 cup sugar, 2 eggs, 1/2 cup coconut, 3/4 plain flour, 1 tsp baking powder, 4 feijoas peeled and sliced. Heat oven to 160 fan bake. Grease muffin tins. In a bowl beat butter and sugar with electric mixer until pale and creamy. Beat in eggs one at a time. Stir in coconut and flour and bp. Spoon mixture into tins and arrange a few feijoa slices over the surface of each cake. Bake for 30 minutes or until a skewer inserted comes out clean.

yeah, bought 2 at the supermarket yesterday, for $1. 10, then on the way home $2 a bag at a roadside stall. wish i had enough room to grow a tree. Will send some down to blenheim to daughters, as they arent there yet.
poor sis in brisbane, is so hanging out for some. wonder if i could send her some. LOL... .

Coconut Feijoa Cake 150 gms butter, 1 1/2 cups castor sugar,
4 eggs, 2 cups deiccated coconut, 2 cups SR Flour 1 tsp Baking powder
pinch salt, 1 cup milk, 1 cup of peeled and chopped feijoas.
Method. Beat the butter and sugar until creamy,
Beat in the egg yolks. Fold in the coconut and sifted dry ingredients with the milk and fruit.
Beat the egg whites until stiff and fold into the cake mixture.
Turn into a well greased and lined 23cm or 25 cm cake tin.
Bake at 180 degrees C for 1 hour or until cooked. Cool for 10 minutes before turning out.
Ice with a Cream Cheese Icing

fejoa, fiejoa, how many ways can you spell it? (think I only spotted those two spellings)
Just a bump for a couple of people looking for ways of preserving/cooking them (and hopefully making it easier for those not sure on the spelling, if they do a search). (and due to the fact it's either in season or just about there) :)
I got two off the tree today, but not sure if that was due to me mowing or if they really think they're about ripe.

feijoa and chocolate cake My gandmother is in the Waikato Rivertones (a singing group) and a few years ago they held a fundraiser selling cookbooks. I dont know where mine is but I do remember there is a recipe in there for feijoa and chocolate cake, so if anyone has that book lying around. .
