Feijoa & Apple Jam This is a good recipe that I cookin my microwave.You can also add 1/4 cup chopped ginger if you like just before potting.
2 cups feijoas, 2 cups apples, juice 2 lemons, 1/2 cup water, 3 cups sugar.
Put fruit, juice & water into a bowl. Cook on high for 20 mins. Add sugar and stir until dissolved then mic on high for a further 15 mins until setting point reached. Pot and seal.

You can double/treble up recipe if you want, just my preference to do it in small batches

just made #25 last night mmmm sooo delishous! crumble with the coconut in it was divine! was gonna have some this morning as there was some left over last night, only to awake to find my husband had bet me to it. no doubt he'll blamethe kids!hehe am gonna make this againg thursday night after i raid mums feijoa tree again

I haven't read through this thread, but I made this last night.YUM!
I just melted the butter and mixed the batter ingredients in a jug.

FEIJOA BUTTERSCOTCH SELF-SAUCING STICKY PUDDINGS
Ingredients
• ¾ cup brown sugar
• 1 cup self-raising flour
• ¼ cup milk
• 1 egg
• 1 teaspoon vanilla
• 100 gm butter melted
• 3 tablespoons golden syrup
• 6 large feijoas, halved
• 6 tablespoons extra brown sugar
• ½ cup boiling water
• icing sugar to dust
Method
1. Preheat oven to 180°C. Coat 6 one-cup capacity oven proof ramekins or small pudding bowls with non-stick baking spray.
2. Place the first measure of brown sugar, the flour, milk, egg and vanilla and melted butter in a food processor and mix until smooth, scraping down the sides of the bowl so the mixture is thoroughly combined.
3. Pour equal amounts of the golden syrup into the bottom of each ramekin. Scoop out the feijoa pulp, keeping it intact, and slice into each ramekin. Pour the batter over the top of the feijoa, filling each ramekin to just three-quarters full. Sprinkle each pudding with a tablespoon of extra brown sugar, then gently pour ¼ cup of boiling water into each ramekin. Do not mix the water in, just carefully pour it on top.
4. Bake for 20 to 25 minutes, until the puddings have risen and are firm, set and golden brown. Serve immediately with a dusting of icing sugar and, if desired, a scoop of vanilla ice cream.

If you've got too many and there is not enough. .room in the freezer - preserve them.Peel the skins from their little bodies, and pack into preserving jars.Make a light syrup - 3 parts water to one part sugar, boil in a pan.Pour over Joas in the Jar, and boil the jar with the screw top lid and cap thing in a pan with the water 2/3rds up the bottle.When the syrup starts to bubble in the jar (about 20-30 mintues) they are ready.They'll turn slightly brownish/green but thats o.k.Don't overdo them as they will turn to mush and that is not fair on them.Remove and cool on the bench.Make sure that the preserving cap thingy is tight after removing the ring.Hope that makes sense.These are DELISH.

Gave away 2 buckets full today & then got another bucketful-hohum what to do !
Made,chutney,sauce,scones,date-
& feijoa cake & last night feijoa upside down cake ! Oh yes frozen heaps too.
Anyone living in Whitianga deprived of feijoas just say & I am happy to give you some !

Feijoa loaf simmer for 5 mins, 1cup feijoa, 1cup water, 1 cup sugar, 50g butter. Cool then add one lightly beaten egg 2 cups self raising flour 1tsp baking soda. Bake at 180 degrees for 50 mins

Joining the feijoa fiends... Last year the kiwifruit producers put a little plastic gizmo in their export packs and it's perfect for opening and eating feijoas in the garden.

It's a little plastic scoop with a serrated knife-part on one end that you can carry in your pocket as you forage. Yes, I know you can just crack feijoas open with your thumbnail and suck them, but these are a bit more genteel for use while foraging in public.Our local supermarket has a line of feijoa trees growing in the public carpark :)
Edited to add:The gizmo is great for children's lunchboxes too - an encouragement to eat fruit.
